  • One pound of jumbo shrimp (peeled and deveined)
  • Six ounces of spinach (can be baby spinach)

Steps

1. Stir the garlic, pepper, salt, and lemon zest in one bowl. After that, add the lemon juice and quarter cup of olive oil. Set it aside.


2. Heat the one tablespoon of olive oil in a skillet over medium-high heat. Test to see if the oil is hot by sprinkling a bit of water. You will know it’s ready if it starts to sizzle.

3. Put the shrimp in the skillet and cook it for two minutes.

4. Once the shrimp is cooked a bit, stir in the spinach, cooking it for another three minutes or when the spinach has wilted, and the shrimp turn pink.

5. Turn off the heat and stir in the lemon-oil mixture you set aside before. Toss it well and put it in a bowl. Serve it immediately and enjoy!
