Rachel Khoo is an internationally recognised food creative, professionally trained cordon blue chef, food writer, and television personality. Rachel has released five recipe books published in several different languages, and featured in a number of television cookery shows broadcast globally. She is best known for her 2012 BBC television series ‘Little Paris Kitchen’ - based on her culinary experiences cooking from her small apartment kitchen in Paris - and her best-selling cookbook of the same name. Her latest television series ‘Rachel Khoo’s Kitchen Notebook: Melbourne’ recently aired in Australia and will be available for viewers worldwide later this year. Rachel also writes regular columns for the London Evening Standard and the Daily Mail’s Weekend magazine. She will launch her new online project Khoollect in November 2015.

Hilary Kinney is a student at West Virginia University in the United States. She has played an integral role in the project WVFOODLINK, a resource mapping emergency food assistance locations in WV by utilizing social science and geospatial research. Beyond WVFOODLINK, Hilary has conducted research related to the feasibility of implementing county-wide food recovery systems. She will be starting her university’s chapter of the Food Recovery Network this fall. Hilary is looking forward to mobilizing students to discuss and combat food waste and food security in her state.

Tesco is a global multichannel retailer operating in 12 markets across Asia and Europe. They employ over 500,000 colleagues, work with suppliers in over 70 countries and serve millions of customers each week in store and online. In October 2013,  Tesco launched the 11th edition programme for Schools education in Poland. In 2014, the programme is dedicated to the problem of food waste. Over 6,000 school children from across the country took part, learning about food waste and finding ways to tackle it. As part of the project, Tesco worked with the Federation of Polish Food Banks to organise a film competition called "A talent not to waste". After learning about responsible food management the school children were asked to make a two-minute film which encourages others not to waste food.

Food Recovery Network
The Food Recovery Network unites students at colleges and universities across America to fight food waste and hunger by recovering surplus perishable food from their college campuses and surrounding communities that would otherwise go to waste and donating it to people in need. Founded in September of 2011, it has since expanded to reach 23 college campuses and recovered over 160,000 pounds (72.75 metric tons) of food that would otherwise have been wasted. During that time, the organization has been covered by MSNBC, ABC, LA Times, and the Washington Post, as well as being recognized by Guidestar as one of the top student-run nonprofits of 2012. Over the next few years, the Food Recovery Network hopes to expand to hundreds of colleges, recovering 10 million pounds of food by 2017 and changing the face of food recovery.

Annakshetra – Food Waste Management for Sustainability
Annakshetra is an initiative funded and implemented by the Centre for Development Communication (CDC), Jaipur to help minimize food wastage by effective channelization of the excess food in weddings, parties, restaurants and temples. Since its inception in 2010, more than 75,500 people have benefited from the program and over half a million meals have been served.

La Mesa Española is the first authentic Spanish restaurant in Nairobi. It offers a variety of Spanish cuisine that includes tapas, small typical bytes from that country, as well as paella, Spanish omelette, gazpacho and selection of Spanish sausages. The restaurant offers the possibility of packing food to take away but also serves small bites (tapas) that allow customers to eat only what they can finish. The philosophy behind it is to avoid any kind of waste. The Chef and his team came up with creative ways to re use food that in other way could be thrown away. SecondBite is committed to making a positive difference to people by identifying sources of nutritious surplus fresh food and produce that would otherwise go to waste and facilitating its safe and timely distribution to agencies and people in need. In 2012, SecondBite collected 3 million kgs of fresh food that might otherwise have gone to waste. Operation Empty Plate: an environmentally friendly campaign initiated on Earth Day
Mr.Xu Zhijun displayed a picture of his clean lunch plate on his Weibo (Twitter-like service in China) account, and called on his followers to follow his example by eating all of their meals and stopping food waste. The campaign became an instant success across the nation. On Earth Day 2013, the campaign, supported by the United Nation Environment Programme (UNEP), is calling on all internet users to take part in Empty Plate Operation 1+2. This new phase aims for a multiplying effect by asking people to post pictures of their empty plates and copy (via @) two of their friends or acquaintances who need to be prompted to clean their own plates.

Stéphanie Calafat
Stéphanie Calafat (Montpellier) joined Chr. Hansen in 2013 as a member of the R&D team. Before, during her master's thesis, she worked for the regional department of the French ministry of Agriculture called DRIAAF. There, she found out solutions to prevent, quantify and valorize food waste. Through her study, she gained an in-depth knowledge on waste in mass catering and had the opportunity to interact with a wide variety of actors. Mrs.Calafat received a Master’s in Agromomy in 2012 from AgroParisTech and specialized in nutrition. She also graduated from Chimie ParisTech with a Master’s degree in Chemistry in 2012.
